1 cup coconut milk (or any preferred plant-based milk)

1/4 cup chia seeds

2 tablespoons maple syrup (or honey, if not vegan)

1 ripe mango, diced

1/2 teaspoon vanilla extract

A pinch of salt

Fresh mint leaves for garnishing

Additional diced mango for topping

Optional: toasted coconut flakes for an extra crunch

Instructions
 

Prepare the Chia Pudding Base:

    - In a mixing bowl, combine the coconut milk, chia seeds, maple syrup, vanilla extract, and salt. Whisk thoroughly until all the chia seeds are well incorporated and the mixture is smooth.

      Chill the Mixture:

        - Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let it sit for at least 4 hours, or overnight for the best texture. The chia seeds will absorb the liquid and create a pudding-like consistency.

          Prepare the Mango:
