Ingredients
  

1 cup coconut milk (canned or carton)

1/2 cup pineapple chunks (fresh or frozen)

1/2 cup mango chunks (fresh or frozen)

1 banana (preferably frozen for creaminess)

2 tablespoons chia seeds

1 tablespoon honey or maple syrup (optional, adjust to taste)

Juice of 1 lime

1/4 teaspoon vanilla extract

Ice cubes (optional, for a thicker texture)

Shredded coconut and fresh fruit slices for garnish (optional)

Instructions
 

In a blender, combine the coconut milk, pineapple chunks, mango chunks, and frozen banana. Blend until smooth and creamy, about 1-2 minutes.

    Add the chia seeds, honey or maple syrup (if using), lime juice, and vanilla extract to the blender. Blend again for about 30 seconds until everything is well incorporated.

      If you desire a thicker smoothie, add a few ice cubes and blend again until desired consistency is reached.

        Taste the smoothie and adjust sweetness or acidity if necessary, by adding more honey/maple syrup or lime juice.

          Pour the smoothie into glasses and let it sit for about 5 minutes to allow the chia seeds to expand slightly. This will give the smoothie a better texture and enhance the nutrition.
