2 ripe avocados

1 can (5 oz) of tuna in water, drained

1/4 cup Greek yogurt (or mayonnaise)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1/4 cup red onion, finely chopped

1/4 cup celery, finely diced

2 tablespoons fresh parsley, chopped

Salt and pepper, to taste

Cherry tomatoes, halved (for garnish)

Lettuce leaves (for serving)

Instructions
 

Prepare the Avocados: Slice each avocado in half lengthwise and carefully remove the pit. Using a spoon, scoop out a small portion of the avocado flesh to create a larger cavity for the salad. Keep the removed avocado flesh aside in a bowl.

    Make the Tuna Mixture: In a mixing bowl, combine the drained tuna, Greek yogurt (or mayonnaise), Dijon mustard, and lemon juice. Mix well until fully incorporated.

      Add Veggies and Season: To the tuna mixture, add the chopped red onion, diced celery, and chopped parsley. Stir gently to combine. Season with salt and pepper to taste.

        Incorporate Avocado Flesh: Mash the reserved avocado flesh with a fork until smooth. Then fold it into the tuna mixture, which will add creaminess and a fresh avocado flavor.

          Assemble the Boats: Scoop generous portions of the tuna avocado mixture into the hollowed-out avocado halves. Ensure each half is filled to the brim!
