Turkey Bacon Breakfast Quesadillas

4 large flour tortillas

8 slices of turkey bacon

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red and green)

1/2 cup diced onions

4 large eggs

1 tablespoon olive oil

Salt and pepper to taste

1 avocado, sliced (optional, for topping)

Salsa or hot sauce (optional, for serving)

Instructions
 

Cook the Turkey Bacon: In a skillet over medium heat, cook the turkey bacon until crispy, about 6-8 minutes. Remove from skillet and let it cool slightly before chopping into small pieces.

    Sauté Vegetables: In the same skillet, add olive oil. Toss in the diced bell peppers and onions. Sauté for about 4-5 minutes until the vegetables are tender. Season with salt and pepper. Remove from heat.

      Scramble the Eggs: In a bowl, whisk the eggs together. Pour the eggs into the skillet using the residual oil and cook, stirring gently, until just set. Remove from heat.

        Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Sprinkle a quarter of the cheddar cheese over half of the tortilla. Add a portion of the scrambled eggs, sautéed veggies, and turkey bacon. Sprinkle another layer of cheese on top before folding the tortilla in half.

          Cook the Quesadillas: Wipe the skillet clean and return to medium heat. Carefully place the folded quesadilla in the skillet. Cook for about 3-5 minutes on each side, until the tortillas are golden brown and the cheese is melted. Repeat the process for the remaining tortillas.

            Serve: Cut the quesadillas into wedges and serve warm, topped with avocado slices and salsa or hot sauce if desired.
