8 oz elbow macaroni or cavatappi pasta

2 cups heavy cream

1 cup whole milk

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup ricotta cheese

1 cup sun-dried tomatoes, chopped

2 cloves garlic, minced

1 tsp dried basil

1 tsp dried oregano

1/2 tsp crushed red pepper flakes (optional, for some heat)

Salt and pepper, to taste

1/2 cup fresh spinach, chopped

1/2 cup breadcrumbs (for topping)

2 tbsp olive oil

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.

    Make the Sauce: In a large saucepan over medium heat, combine the heavy cream and whole milk. Stir in the minced garlic and bring to a gentle simmer.

      Add Cheeses: Immediately add the mozzarella, Parmesan, and ricotta to the simmering cream mixture. Stir constantly until the cheeses are melted and the sauce is smooth.

        Season the Sauce: Add the sun-dried tomatoes, dried basil, dried oregano, crushed red pepper flakes (if using), and season with salt and pepper. Stir in the chopped spinach and remove from heat.

          Combine Pasta and Sauce: Add the drained pasta to the cheese sauce and stir until all the pasta is well-coated with the creamy mixture.

            Prepare the Topping: In a small bowl, combine breadcrumbs with olive oil, mixing well to evenly coat the breadcrumbs.

              Bake: Preheat your oven to 350°F (175°C). Pour the mac and cheese mixture into a greased 9x13 inch baking dish, sprinkle the breadcrumb mixture evenly on top, and bake for 20-25 minutes until golden and bubbly.

                Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
