1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 large ripe avocado, diced

1 medium tomato, diced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup romaine lettuce, chopped

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

1 cup tortilla chips, crushed (for topping)

Optional: Vegan sour cream or cashew cream for serving

Instructions
 

Prepare the Vegetables: In a large bowl, combine the chopped romaine lettuce, diced avocado, diced tomato, diced bell pepper, halved cherry tomatoes, and red onion.

    Mix the Beans and Corn: In a separate bowl, mix the rinsed black beans and corn kernels. Add lime juice, cumin, chili powder, salt, and pepper to the mixture, and toss to combine.

      Combine Ingredients: Gently fold the bean and corn mixture into the chopped vegetables until everything is well incorporated.
