4 cups watermelon radish, thinly sliced

1 cup cherry tomatoes, halved

1 cup feta cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup fresh mint leaves, chopped

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper to taste

Optional: 1/4 cup walnuts or pistachios, chopped for added crunch

Prepare the Vegetables: Begin by washing the watermelon radish thoroughly. Using a sharp knife or mandoline, thinly slice the radish into rounds. If the rounds are large, you may want to cut them in half or quarters for easier eating.
