1 cup rolled oats

1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 cup pumpkin puree (canned or fresh)

1/2 cup maple syrup or honey

1/3 cup unsweetened applesauce

1/4 cup melted coconut oil or vegetable oil

2 large eggs

1 teaspoon vanilla extract

1/2 cup chopped nuts or chocolate chips (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir well to blend all the dry ingredients.

      In another bowl, whisk together the pumpkin puree, maple syrup (or honey), applesauce, melted coconut oil, eggs, and vanilla extract until smooth.

        Pour the wet ingredients into the bowl of dry ingredients. Stir gently until just combined. Be careful not to overmix; it's okay if there are a few lumps.

          If desired, fold in the chopped nuts or chocolate chips and raisins or dried cranberries. This adds extra flavor and texture to your muffins.

            Spoon the muffin batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

              Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean. The tops should be slightly golden.

                Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
