1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

12 small tortilla cups or mini lettuce cups (for serving)

Instructions
 

Prepare the Dressing: In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined.

    Mix the Salad: In a large mixing bowl, combine the black beans, corn, diced bell pepper, cherry tomatoes, red onion, avocado, and cilantro.

      Add the Dressing: Pour the prepared dressing over the salad mixture and gently toss everything together until all the ingredients are well coated with the dressing.
