1 cup corn kernels (fresh, frozen, or canned)

1 medium red bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

Juice of 1 lime

1/4 cup fresh cilantro, chopped

8 small corn or flour tortillas

1 avocado, sliced

1/2 cup crumbled feta or cotija cheese (optional)

Hot sauce (optional)

Instructions
 

Prepare the Salsa Mixture: In a large mixing bowl, combine the black beans, corn, diced red bell pepper, chopped red onion, and minced garlic.
