1 cup jasmine rice

2 cups vegetable broth (or water)

1 lime (zested and juiced)

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup red onion, finely chopped

1/2 cup diced bell peppers (any color)

1/4 cup crumbled feta cheese (optional)

Lime wedges, for serving

Fresh cilantro, for garnish (optional)

For the Dressing:

1/4 cup olive oil

1 tablespoon honey or agave syrup

1 tablespoon apple cider vinegar

1 teaspoon chili powder

Instructions
 

Cook the Rice:

    - Rinse the jasmine rice under cold water until the water runs clear. This removes excess starch and helps the rice become fluffy.

      - In a medium saucepan, combine the rinsed rice and vegetable broth (or water). Add a pinch of salt.

        - Bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes, or until all the liquid is absorbed.
