Zesty Greek Chicken Bowls with Tzatziki

For the Chicken:

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

3 tablespoons lemon juice (freshly squeezed)

2 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

For the Tzatziki:

1 cup Greek yogurt

1 small cucumber, grated and excess moisture squeezed out

1 clove garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Salt, to taste

For the Bowls:

2 cups cooked quinoa or rice

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 cup cucumber, diced

½ red onion, thinly sliced

½ cup Kalamata olives, pitted and halved

Feta cheese, crumbled (optional)

Fresh parsley, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Tzatziki: In another bowl, mix the Greek yogurt with the grated cucumber, minced garlic, chopped dill, lemon juice, and a pinch of salt. Stir well and refrigerate to let the flavors meld.

      Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C). Remove from heat and let it rest for a few minutes before slicing.

        Assemble the Bowls: In serving bowls, layer the cooked quinoa or rice at the bottom. Top with sliced grilled chicken, halved cherry tomatoes, diced red bell pepper, diced cucumber, sliced red onion, and Kalamata olives. Drizzle generously with tzatziki sauce.

          Finish and Serve: If desired, sprinkle crumbled feta cheese over the top and garnish with fresh parsley. Serve the bowls immediately, with extra tzatziki on the side.
