1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup unsalted butter, softened

1 large egg yolk

1 tsp vanilla extract

A pinch of salt

4 large eggs

1 cup granulated sugar

½ cup freshly squeezed lemon juice (about 4 lemons)

Zest of 2 lemons

½ cup unsalted butter, cut into pieces

For Garnish:

Lemon slices (optional)

Fresh mint leaves (optional)

Whipped cream (optional)

Instructions
 

Prepare the Tart Shell:

    - In a large mixing bowl, combine the flour, powdered sugar, and a pinch of salt. Add the softened butter and mix until crumbly.

      - Stir in the egg yolk and vanilla extract until the dough forms.

        - Press the dough into a 9-inch tart pan evenly across the bottom and up the sides.

          - Prick the bottom with a fork and chill in the refrigerator for at least 30 minutes.

            - Preheat your oven to 350°F (175°C).

              - Bake the tart shell for 15-20 minutes or until lightly golden. Let it cool completely.

                Make the Lemon Curd Filling:

                  - In a medium saucepan, whisk together the eggs and sugar until well combined.

                    - Stir in the lemon juice and lemon zest.

                      - Cook over medium heat, constantly stirring, until the mixture thickens enough to coat the back of a spoon, about 8-10 minutes.

                        - Remove from heat and strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps.

                          - Add the butter pieces to the strained lemon curd and mix until completely melted and smooth.

                            Assemble the Tart:

                              - Pour the lemon curd filling into the cooled tart shell, spreading it evenly.

                                - Refrigerate for at least 2 hours, or until the filling is set and chilled through.

                                  Serve and Garnish:

                                    - Once set, slice the tart into wedges.
