Ingredients

4 cups green cabbage, finely shredded

1 cup purple cabbage, finely shredded

1 cup carrots, grated

1/2 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon lemon juice (freshly squeezed)

1 tablespoon lemon zest

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 teaspoon honey (optional, for sweetness)

Salt and pepper to taste

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the green cabbage, purple cabbage, and grated carrots. Toss them together until evenly mixed.

Make the Dressing: In a separate smaller bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, lemon juice, lemon zest, and honey (if using). Make sure the dressing is smooth and well combined.

Combine: Pour the dressing over the shredded cabbage and carrots mixture. Gently toss everything together until the vegetables are well coated in the dressing.

Season: Add the chopped fresh dill, salt, and pepper to taste. Mix again to distribute the seasoning evenly.

Chill: Cover the coleslaw with plastic wrap and refrigerate for at least 30 minutes. This allows the flavors to meld and the cabbage to soften slightly.

Serve: Before serving, give the coleslaw one last toss. Taste and adjust seasoning if necessary. Enjoy it as a refreshing side dish or as a topping for sandwiches and tacos!
