2 large zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves, for garnish

Instructions
 

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Slice the zucchinis lengthwise into thin strips, about 1/8 inch thick. Use a mandoline if available for even slices. Sprinkle with salt and let them sit for 10 minutes to draw out excess moisture. Pat dry with paper towels.

    Make the Ricotta Filling: In a bowl, combine ricotta cheese, half of the mozzarella, Parmesan cheese, minced garlic, dried oregano, olive oil, salt, and pepper. Mix well until all ingredients are incorporated and smooth.

      Assemble the Roll-Ups: On a baking sheet lined with parchment paper, take a slice of zucchini and place a spoonful of the ricotta mixture at one end. Roll it tightly and place it seam-side down. Repeat this process for all zucchini slices and ricotta filling.

        Prepare the Marinara Sauce: In a medium saucepan, heat the marinara sauce over medium heat until warmed through. If desired, add additional herbs like basil or oregano for extra flavor.

          Bake the Roll-Ups: In a baking dish, spread a thin layer of marinara sauce on the bottom. Arrange the zucchini roll-ups on top of the sauce, then cover with the remaining marinara. Sprinkle the remaining mozzarella cheese on top of the roll-ups.

            Final Bake: Cover the dish with aluminum foil and bake for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
