2 medium zucchinis, grated

1 can (15 oz) black beans, drained and rinsed

1 cup breadcrumbs (preferably whole wheat or gluten-free)

1/2 cup finely chopped onion

2 cloves garlic, minced

1/2 cup corn (frozen or fresh)

1 large egg (or flax egg for vegan option)

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons fresh cilantro or parsley, chopped (optional)

Olive oil, for cooking

Burger buns and toppings (lettuce, tomato, avocado, etc.)

Instructions
 

Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Squeeze Zucchini: Place the grated zucchini in a clean dish towel and squeeze out excess moisture. This step is crucial to prevent soggy burgers.

      Mash the Beans: In a large mixing bowl, add the drained black beans. Use a fork or a potato masher to mash the beans until mostly smooth, with some chunks remaining for texture.

        Combine Ingredients: Add the soaked and squeezed zucchini, breadcrumbs, chopped onion, minced garlic, corn, egg (or flax egg), cumin, smoked paprika, salt, and pepper into the bowl with the mashed black beans. If using, add cilantro or parsley. Mix until all ingredients are well combined.

          Form Patties: Using your hands, form the mixture into burger patties, about 1/2 inch thick. You should get around 4-6 patties depending on the size.

            Cook the Patties: Heat a tablespoon of olive oil in a large skillet over medium heat. Once hot, add the patties, cooking 4-5 minutes on each side or until golden brown and slightly crispy. If baking, place patties on the prepared baking sheet and bake for 20-25 minutes, flipping halfway through.

              Assemble the Burgers: Toast your burger buns lightly and layer the zucchini bean patties with your favorite toppings such as lettuce, tomato, avocado, and any sauces you prefer.
