3 cups grated zucchini (about 2 medium zucchinis)

1 cup diced onion (about 1 medium onion)

1 cup diced bell pepper (any color)

1 cup chopped fresh spinach or kale

6 large eggs

1 cup milk (or non-dairy milk)

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 cup cooked and crumbled breakfast sausage or bacon (optional for extra flavor)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

1 tsp fresh thyme (or 1/2 tsp dried thyme)

1 cup bread cubes (day-old bread works best, about 2 slices)

Fresh herbs for garnish (like parsley or chives)

Instructions
 

Preheat your oven: to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or olive oil.

    Prepare the zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth. Squeeze out the excess moisture to prevent the casserole from becoming too soggy. Set aside.

      Sauté the vegetables: In a medium skillet over medium heat, add a splash of olive oil. Sauté the diced onion and bell pepper for about 5 minutes, until softened. Add the chopped spinach or kale and cook for an additional 2 minutes until wilted. Remove from heat and let cool.

        Whisk the eggs: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, black pepper, and thyme until well combined.

          Combine ingredients: Stir the squeezed zucchini, sautéed vegetables, shredded cheese, and cooked sausage (if using) into the egg mixture. Fold in the bread cubes until everything is well-coated.

            Transfer to baking dish: Pour the mixture into the prepared baking dish, spreading it evenly.

              Bake the casserole: Place in the preheated oven and bake for 35-40 minutes, or until the eggs are set and the top is golden brown.
