2 medium zucchinis

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon sea salt (adjust to taste)

¼ teaspoon black pepper

¼ cup grated Parmesan cheese (optional for a cheesy flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper to prevent sticking.

    Slice the Zucchini: Wash the zucchinis thoroughly. Using a mandoline slicer or a sharp knife, slice them into thin rounds, about 1/8 inch thick. The thinner they are, the crispier they’ll get.

      Prepare the Coating: In a large bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, dried oregano, sea salt, and black pepper. If you choose to use Parmesan cheese, mix it in as well.

        Toss the Zucchini Slices: Add the zucchini rounds to the bowl and gently toss them in the oil and spice mixture until they are evenly coated.

          Arrange on Baking Sheet: Spread the zucchini slices in a single layer on the prepared baking sheet. Make sure they don’t overlap; this helps them cook evenly.

            Bake Slowly: Place the baking sheet in the preheated oven and bake for 2 to 3 hours, or until the chips are golden brown and crispy. Check them every 30 minutes and flip the slices for even crispiness if needed.

              Cool Down: Once they are finished baking, remove the chips from the oven and let them cool on the baking sheet for a few minutes. The chips will continue to crisp up as they cool.
