2 medium zucchinis, spiralized or finely chopped

1 cup cooked jasmine rice (preferably day-old)

1 cup mixed vegetables (carrots, peas, corn)

2 cloves garlic, minced

1 small onion, finely chopped

2 green onions, chopped (for garnish)

2 eggs, beaten

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon ginger, grated (optional)

Red pepper flakes (optional, for heat)

Instructions
 

Prepare Ingredients: Start by chopping, spiralizing, or grating the zucchinis into small pieces. If using day-old rice, break it up with your hands to remove clumps.

    Cook the Eggs: Heat a large skillet or wok over medium heat. Add 1 tablespoon of olive oil. Pour in the beaten eggs and scramble until cooked through. Remove the eggs from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add another tablespoon of olive oil. Once hot, add the chopped onion and garlic. Sauté for about 2 minutes or until the onion is translucent and fragrant.

        Add Vegetables: Incorporate the mixed vegetables and zucchini into the skillet. Stir-fry for 4-5 minutes, or until the zucchini is tender but still slightly crisp.

          Combine Rice: Add the cooked jasmine rice to the skillet, stirring to combine. Pour in the soy sauce and sesame oil, mixing well. If using ginger, add it now and stir for an additional minute.

            Finish with Eggs: Add the scrambled eggs back into the skillet, gently folding them into the rice mixture. Season with salt, pepper, and red pepper flakes if desired. Allow everything to cook together for another 2-3 minutes, ensuring the rice is heated through.

              Garnish and Serve: Remove from heat, and sprinkle chopped green onions on top. Serve hot as a deliciously unique side dish or a main vegetarian meal.
