2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

1 large egg

2 green onions, finely chopped

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

2 tablespoons olive oil (for frying)

For the Garlic Aioli:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt to taste

Freshly cracked black pepper to taste

Prepare the Zucchini: In a large bowl, combine the grated zucchinis with 1 teaspoon of salt. Let them sit for about 10 minutes to draw out excess moisture.

    Drain the Zucchini: After 10 minutes, use a clean kitchen towel to squeeze out as much moisture as possible from the grated zucchinis. This step is crucial for crispy fritters.

      Mix the Batter: In a mixing bowl, add the drained zucchini, flour, Parmesan cheese, egg, green onions, black pepper, and red pepper flakes (if using). Stir until well combined.

        Cook the Fritters: Heat olive oil in a large skillet over medium heat. Using about 2 tablespoons of the zucchini mixture for each fritter, drop them into the hot skillet, flattening them slightly with a spatula. Fry for about 3-4 minutes on each side or until golden-brown and crispy. Remove them to a paper towel-lined plate to drain excess oil.

          Prepare the Garlic Aioli: In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Adjust seasoning to taste.
