Zucchini Mac and Cheese

2 medium zucchini, spiralized or grated

8 oz elbow macaroni (or your preferred pasta)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup whole milk

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup breadcrumbs (for topping)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Zucchini: While the pasta cooks, prepare the zucchini by spiralizing it or grating it. If using spiralized zucchini, gently squeeze to remove excess moisture.

      Start the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes to create a roux. Slowly pour in the whole milk while continuously whisking to avoid lumps.

        Add Spices: Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper. Continue to cook and whisk until the mixture thickens (about 3-5 minutes).

          Incorporate Cheese: Reduce heat to low. Gradually add the cheddar and mozzarella cheese to the saucepan, stirring until completely melted and smooth.

            Combine Pasta and Zucchini: In a large bowl, combine the cooked pasta, zucchini, and cheese sauce. Stir until all ingredients are well mixed.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a baking dish (around 9x13 inches) with a bit of olive oil. Pour the mac and cheese mixture into the dish.
