Zucchini Meatball Skewers

For the Meatballs:

1 pound ground beef or turkey

1 cup grated zucchini (squeeze out excess moisture)

1/2 cup breadcrumbs (or gluten-free alternative)

1/4 cup grated Parmesan cheese

1 large egg

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

For the Skewers:

1 bell pepper (any color), cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

Cherry tomatoes, whole

Olive oil, for drizzling

Fresh parsley, chopped (for garnish)

For the Dipping Sauce:

1/2 cup Greek yogurt

1 tablespoon lemon juice

1 tablespoon fresh dill or a pinch of dried dill

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Meatball Mixture: In a large bowl, combine the ground meat, grated zucchini, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, basil, salt, and pepper. Mix until well combined, but do not overmix.

      Form the Meatballs: Using your hands, form the mixture into small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet.

        Bake the Meatballs: Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown, turning halfway for even cooking.

          Prepare the Skewers: While the meatballs are baking, soak wooden skewers in water for about 10-15 minutes (this prevents burning on the grill). Thread the baked meatballs onto the skewers, alternating with bell pepper pieces, red onion, and cherry tomatoes.

            Grill the Skewers: Heat a grill or grill pan over medium heat. Lightly brush the skewers with olive oil. Grill the skewers for about 5-7 minutes, turning occasionally, until the vegetables are tender and slightly charred.

              Make the Dipping Sauce: In a small bowl, mix the Greek yogurt, lemon juice, dill, salt, and pepper. Adjust seasoning to taste.

                Serve: Arrange the skewers on a serving platter, drizzle with additional olive oil, sprinkle with chopped fresh parsley, and serve with the dipping sauce on the side.
