3 medium zucchinis (spiralized into noodles)

2 cups cherry tomatoes (halved)

1 cup fresh mozzarella balls (bocconcini)

1/4 cup fresh basil leaves (chopped, plus extra for garnish)

3 tablespoons olive oil

2 tablespoons balsamic glaze

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Prepare the Zucchini Noodles: Using a spiralizer, turn your zucchinis into noodles and set them aside. If you don’t have a spiralizer, you can use a vegetable peeler to create thin ribbons, or buy pre-spiralized zucchini noodles from the store.

    Sauté the Zucchini: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the spiralized zucchini noodles and sauté for 2-3 minutes, just until slightly softened. Be careful not to overcook, as they can become mushy. Remove from heat and set aside.

      Combine Ingredients: In a large mixing bowl, combine the sautéed zucchini noodles, halved cherry tomatoes, fresh mozzarella, and chopped basil.

        Dress the Salad: In a small bowl, whisk together the remaining 2 tablespoons of olive oil, balsamic glaze, salt, black pepper, and red pepper flakes (if using). Pour the dressing over the zucchini mixture and gently toss to coat everything evenly.
