Zucchini Pizza Bites

2 medium zucchinis

1 cup marinara sauce (homemade or store-bought)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/4 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional for heat)

Fresh basil leaves for garnish (optional)

Olive oil for drizzling

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: Wash the zucchinis thoroughly. Slice them into 1/2-inch thick rounds. You should get around 18 to 20 slices. Place the rounds on a paper towel and sprinkle with a little salt. Allow to sit for about 10 minutes to draw out moisture.

      Pat Dry: After 10 minutes, pat the zucchini rounds dry with another paper towel to remove excess moisture and salt.

        Arrange on Baking Sheet: Place the zucchini rounds on a baking sheet lined with parchment paper. Drizzle a little olive oil over each slice and season with pepper, garlic powder, and half of the dried oregano and basil.

          Bake the Zucchini: Bake in the preheated oven for 10 minutes until slightly tender.

            Add Pizza Toppings: Remove the baking sheet from the oven. Spoon about a teaspoon of marinara sauce onto each zucchini slice. Sprinkle with mozzarella cheese, Parmesan cheese, and the remaining oregano and basil. If using, sprinkle red pepper flakes for a spicy kick.

              Final Bake: Return to the oven and bake for an additional 10-12 minutes, or until the cheese is bubbling and golden brown.

                Garnish and Serve: Once done, remove from the oven and let the zucchini pizza bites cool for a couple of minutes. Garnish with fresh basil leaves if desired. Serve warm as an appetizer or snack!
