Zucchini Pizza Grilled Cheese

2 medium zucchinis

4 slices of whole grain bread

1 cup shredded mozzarella cheese

1/2 cup marinara sauce (plus extra for dipping)

1/2 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1 tablespoon olive oil

Fresh basil leaves for garnish

Salt and pepper to taste

Instructions
 

Prepare the Zucchini:

    - Rinse and dry the zucchinis. Cut them into 1/4-inch thick rounds.

      - Lightly sprinkle salt over the zucchini slices and let them sit for about 10 minutes to draw out moisture. Pat them dry with a paper towel afterward.

        Sauté the Zucchini:

          - In a skillet, heat 1 tablespoon of olive oil over medium heat.

            - Add the zucchini slices and sprinkle with Italian seasoning, garlic powder, salt, and pepper.

              - Sauté for about 3-4 minutes on each side or until the zucchinis are tender and golden. Remove from heat and set aside.

                Assemble the Sandwich:

                  - Spread marinara sauce on one side of each slice of bread.

                    - On the un-sauced side of two slices, layer the sautéed zucchini evenly. Sprinkle with a generous amount of shredded mozzarella cheese, then top with the other two slices of bread (sauce-side facing in).

                      Grill the Sandwiches:

                        - Wipe the skillet clean and return it to medium heat.

                          - Add a bit more olive oil or butter to the pan.

                            - Place the assembled sandwiches in the skillet and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

                              Serve:

                                - Once cooked, remove the sandwiches from the skillet. Let them cool for a minute, then cut them in half.

                                  - Garnish with fresh basil leaves and serve with extra marinara sauce for dipping.
