Zucchini Spinach Grilled Cheese Wraps

4 large whole wheat tortillas

1 medium zucchini, thinly sliced

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese (or your favorite cheese)

½ cup cream cheese, softened

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Prep the Vegetables: In a skillet over medium heat, add the olive oil. Once hot, sauté the minced garlic for 1 minute until fragrant. Add the sliced zucchini and cook for about 5-7 minutes, stirring occasionally until the zucchini is tender. Stir in the chopped spinach and Italian seasoning, cooking until the spinach is wilted, about 2-3 minutes. Season with salt and pepper to taste. Remove from heat and let cool slightly.

    Prepare the Cream Cheese Mixture: In a small bowl, mix the softened cream cheese with a sprinkle of salt, pepper, and a dash of hot sauce or red pepper flakes, if desired. This will add flavor and creaminess.
