Zucchini Tomato Cheddar Frittata

4 large eggs

1 cup zucchini, grated or finely diced

1 cup cherry tomatoes, halved

1 cup shredded sharp cheddar cheese

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh basil, for garnish (optional)

Preheat the oven: Preheat your oven to 375°F (190°C).

    Sauté the vegetables: In an oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1 minute, making sure it doesn't burn.

      Cook the zucchini: Add the grated or diced zucchini to the skillet and cook for 3-4 minutes until it starts to soften. Stir in the halved cherry tomatoes and continue to cook for another 2 minutes, allowing the flavors to meld.

        Prepare the egg mixture: In a bowl, whisk together the eggs, dried oregano, salt, and black pepper until well combined. You can also mix in half of the shredded cheddar cheese for added flavor.

          Combine and cook: Pour the egg mixture over the sautéed vegetables in the skillet. Stir gently to distribute everything evenly. Allow the frittata to cook on the stovetop for about 4-5 minutes, until the edges start to set.

            Add cheese and bake: Sprinkle the remaining cheddar cheese on top of the frittata, then transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the frittata is puffed up and the center is set.

              Cool and serve: Remove the frittata from the oven and let it cool for a few minutes before slicing. Garnish with fresh basil if desired. Serve warm or at room temperature.
